Himalayan salt is mined from the Punjab region in Pakistan.  It's pink-ish colour comes from trace minerals.  It is used as you would use sea salt in cooking.  There are varying degrees of colour within the veins of Himalayan salt mines so the colour of the salt may vary.  The size of the grain in this coarse salt is ideal for salt grinders.
