White Peppercorns are from the same plant as Black Peppercorns. In fact, they are the same berry! The black peppercorn is picked when almost ripe then left to sun dry and it becomes wrinkled and black in appearance. This process gives it a variety of flavour profiles. White peppercorns are the same berry but it is soaked and the outer layer (which would wrinkle and turn black) falls off. White pepper is spicier than black pepper and is commonly used in clear broths and light sauces to bring that flavour without the colour.
