Kosher salt has a slightly larger grain size than typical sea salt or table salt. It is said to have a cleaner flavour due to the lack of bitter-flavoured additives such as iodine, fluoride or dextrose. It is used in the same volume quantities as you would for table salt or sea salt, however because of the grain size the volume weight will be lighter. Often, recipes calling for Kosher salt will use volume rather than weight. It is also used when cleaning wooden cutting boards or cast iron pans as an abrasive that rinses off without leaving a residue.
