If you take a ripe Jalapeño, and dry it in a smoker, you have a Chipotle.  Used primarily in Mexican, Tex-Mex, and  Southwestern cuisine, the Chipotle adds a smokey/earthy and medium heat to dishes.  It can be added to soups, braising liquid, beans, scrambled eggs and used to give a smokey spicy flavour to vegetables.  Try some mixed with mayo for a smokey edge to any pasta salad or sandwich.
